Ingredients: Rice, fresh goat meat, mint, chorizo or chouriça, garlic, olive oil, wine, salt.
“The stomachs of slaughtered kids or goats are used. They are washed very well. It is even customary to scald them with lime to get them nice and clean. Small bags are cut out of this skin, which are then filled with rice, fresh meat from the kid cut into small pieces, chopped garlic, salt, small pieces of mint, crumbled chorizo or chouriça, wine and olive oil in equal quantities. The prepared mixture is tasted before being bagged and tasted. The mint gives it the taste, but if there is too much, it can also be bitter. Since the rice swells, there should not be too much. The little bags (maranhos) are closed with a needle and thread and cooked in a pan in plain water. They are served with vegetables, potatoes and cabbage.”
