This is the reaction of Bruno Ladeira, Manager of Fiado Restaurant in Janeiro de Cima, one of the establishments distinguished by the IVDP- Instituto dos Vinhos do Douro e Porto with the Gold Diploma, the highest award attributed in the 10th Gastronomy with Port Wine competition.
On 19 December, Fiado Restaurante was also awarded Gold in the contest "A Revolta do Bacalhau” (The Codfish Revolution) on 19 December, where professionals are challenged to develop salted codfish recipes.
This was the menu created by Bruno Ladeira, together with Chef Filipe Aires, for the Gastronomy with Port Wine Competition:
• Starter: Ravioli with serra cheese and earthy mushroom filling, paired with 100 hectares Códega de Larinho 2017
• Main course: Lamb carré in a Bafarela Reserva reduction paired with Bafarela Grande Reserva 2015
• Dessert Chocolate served at the ideal temperature paired with Dow's 10 Years Old
With this menu, Bruno Ladeira and Filipe Aires sought "the best pairing of regional products with Douro and Port wines" and, at the same time,"new gastronomic trends that enhance the region".
For “A Revolta do Bacalhau”, Fiado Restaurant presented the dish “Bacalhau com Aromas da Serra”, a salted cod from Norway made with regional products, mushrooms, Serra cheese and aromatic herbs.
"Our main objective is to continue to participate and promote the destination", declares the Head Chef.
Every year, chefs and specialists from the IVDP choose the dish that best pairs Port and Douro wines with gastronomy.
The initiative displays and encourages the creativity of restaurants, selecting Port and Douro Wines as the essential part of pairing a meal
This year's list of award winners was released on 17 December. In total, 100 restaurants competed, of which 28 were awarded the Gold certificate.
